I'm not a chicken thigh fan but my husband is. I didn't have any carrots, bell pepper or cream of mushroom soup but I did have onion and 2 cans of cream of chicken soup. I added a few shakes of Emeril's Essence, a can of drained mushrooms and followed the directions. My husband is still raving about the recipe. He says this is definitely a keeper. Thanks for a quick easy, painless and now favorite recipe.

My first blackening attempt. My husband and I enjoyed the recipe, but did not find it spicy at all. I cooked a second batch of Tilapia and heavily doubled the blackening seasoning and while better, we still did not find it spicy. A cursory look around the Internet included some blackening spices with Chili Powder, so I will probably look for another rub, but thanks for posting the recipe and getting me started with blackened foods.

Awesome! I made this in my bread machine with 2 teaspoons of garlic cloves and 2 tsps. of Italian Seasoning. I used the Exquisite Pizza Sauce recipe from this site and baked it in my Lodge cast iron pizza pan. What a wonderful recipe, no more take-out pizza for me ever! Thanks for posting.
