Carrot Cake III

I have never cared for carrot cake but my daughter loves it. I can honestly say this is one of the best recipes for carrot cake I have ever tried. I believe I am a lover of carrot cake now! I did shred the carrots instead of grate them, though. This recipe is a keeper! Thank you!!!
