Classic Bran Muffins
I gave it four stars for taste (really good, but not the greatest I have ever had)but I would give it 5 stars when I combine nutritional value and taste. Considering all the substitutions, it is great: 1-1 substitution applesauce for oil, 1-1 substitution honey for brown sugar, weetabix combined with raisin bran (since I didn't have enough raisin bran), and I added a tablespoon of flax seed. If I had them, I would have added a little wheat germ. I used all purpose four, but would have used whole wheat if I had it. Muffins are very moist, and my daughter (3 years old) loves them. I used chopped prunes instead of raisins to even further aid in digestion (she has a little problem...) to boost the fibre even more. For a healthy breakfast or snack, I suggest giving these a try.

Quick Cream Cheese Pie
I loved this pie! We picked our own fresh strawberries and used them in this yummy pie. I can't wait to pick more and make another one. I intend to try it with raspberries in July and blueberries during blueberry season. Can't wait!

Beef Barley Vegetable Soup
This soup is hearty and delicious. I browned the cubed-up beef first,and then put all ingredients except barley into the slow cooker. I added about a cup of red wine, and took advice of the others: doubled the broth, left out the sugar. I love the nutritional punch of Kale so I chopped up some of that and threw it in (SOOOO good for you - I love when my kids eat it!) I meant to add some sliced button mushrooms at the end but forgot. Added non-quick cooking barley at the end for about a half hour. It made just under 4 litres of soup. Oh, and I also left out the packaged vegetables and just used the fresh ones (plus the kale). Next time I think I will try a few splashes of Worchestershire sauce just for fun, not that it wasn't really good without it! Even with doubling the liquid, it is a hearty almost stew-like soup. You can afford to add more liquid if like, but I find it easier to feed to my kids when it's thicker like this. Enjoy!
