Spinach Tortellini Soup
This is the first recipe I ever made off this website. I'm not sure what took me so long to review it, because this has become a household favorite! A very quick and simple soup, that is hearty and filling. Perfect for a chilly fall day or a snowy night. I've made some minor adjustments over the years that I think really add to existing flavors of the soup. Firstly I add some chunky veggies to the soup, as that is how I like it (usually carrots, onion, celery, and zucchini), then I crush 2-4 cloves of garlic into it (depending on amount I am making). I add the spinach in the last few minutes of cooking, otherwise the spinach gets soggy and slimy, this way it comes out perfectly blanched and tender. I use the rainbow (cheese) tortellini to add some color to the dish, and then sprinkle grated parm over it and top it with red pepper. The melted cheese and pepper really kick up the broth a notch! I wish it was possible to give this recipe more stars!

Sausage and Peppers Lasagna
I made this for the first time tonight. This was actually my first time ever making Lasagna too. & this Lasagna was DELICIOUS, and that's saying something since I do not like lasagna. My boyfriend said this was the best Lasagna that he'd ever had, and that's saying something because Lasagna is his most favorite meal. I made some minor adjustments. I used HOT Italian sausage since my boyfriend and I like some kick with our food. I listened to a couple previous reviewers and I added an extra brick of cream cheese, as well as I diced up a whole onion. For the spaghetti sauce I used Hunts Thick N Chunky Roasted Garlic (this is what I use as a base for my homemade spaghetti sauce) and I added some Italian seasoning, and some finely chopped mushrooms (I finely chopped the peppers too, since I didn't want chunky veggies taking away from the flavors in this dish). I used the "No boil" lasagna noodles so I added a bit of extra water to my sauce after some words of caution from my mother. After all that, I found that I didn't have quite enough cream cheese mixture and not enough sauce. I opened a second can of Hunts and added it to the left over sausage mixture for the top layer. I also ran out of noodles. I think I needed to use a smaller dish, but then there probably wouldn't have been deep enough. I served this dish with a garden salad as per my boyfriends request, and some garlic toast. This recipe will be one that is used often in our house. Thanks for sharing this! YUM!

Maple Salmon
This is simply the best way I've ever cooked/eaten salmon. A family member made maple salmon for dinner for me about 9 years ago, and I've always thought about it since. I decided to see if I could find my own recipe to try and recreate it, and I stumbled on this. It is AMAZING. I didn't change anything to the recipe except to double the sauce as I was using a larger piece of fish. I used some left over sauce to put over top of rice. It was delicious and there was no left overs. This will definitely be made many many times in our house! You haven't tasted salmon until you try it like this.
