Rosemary Mushroom Goose Breast

I made some minor changes in recipe as follows: Used home made red current wine for marinade instead of wine vinegar, Leeks instead of onion, doubled up on the garlic, didnt have fresh mushrooms so used canned but sauteed the same, used more milk (it was WAY too thick and added garnish of fresh snipped chives, fresh parsley sprigs and fresh rosemary sprigs. Meat shoud NOT be over cooked.. only to med rare so remains juicy. Cut against the grain into long steaks. excellent dish!
