Pico de Gallo
Not as delicious as my local deli's Pico de Gallo, but it was tasty nonetheless. I halved the recipe and served it with chicken quesadillas. It had a very nice fresh flavor that we all enjoyed.

Chuck's Favorite Mac and Cheese
I'm not big on mac and cheese, but this was a well-rounded meal. As many suggested, I added 1/2 cup of milk, and heated the milk, sour cream, cottage cheese, and cheddar cheese together in a saucepan until it was creamy, and then tossed it with the pasta. I had some polish sausage lying around, so I fried some up and threw it in with the noodles. I added cayenne pepper and garlic powder, and the final flavor was satisfying. It seemed nice and creamy to me; maybe that's because I added the 1/2 cup milk and I used a 16oz container of cottage cheese instead of 12oz. It was a recipe that would go over well with kids.

German Spaetzle Dumplings
This is surprisingly easy and was very satisfying. I was very pleased with the end result (I had never made spaetzle before) and served it with beef gravy, because I had no fresh parsley. Like others, I have no spaetzle maker, so I squeezed the dough through an old bread bag with holes in the bottom. I would note though that this recipe doesn't make enough to serve 6 people. I am only cooking for two and we had barely any leftovers.
