Smushed Apples and Sweet Potatoes
We really enjoyed this recipe. However next time I think I will add a second apple because while this was excellent as made, it didn't taste anything like apple pie! Like another revieweer I made the sweet potatoes in the microwave. It's faster and easier and the sweet potatoes are mashed at the end anyways so it doesn't matter if they're soft when they are peeled. I used sugar substitute in place of the sugar. All in all a very tasty dish. A definite keeper

Crustless Cranberry Pie
Loved this. I usually do not bake but this was too tempting a recipe not to try. So easy AND tasty. A little tart but afterall it is cranberries!! I followed another reviewers suggestion and substitutted Splenda for 1/2 the sugar. A hint: we stock up on fresh cranberries right before Thanksgiving when they are plentiful (and usually cheaper) in the stores and freeze the cranberries right in the bags. That way we have fresh cranberries to use all year round. I will definitely be making this recipe again and again.

Manicotti
Really really yummy. I'd give it more stars if I could. The only problem is that since it is so caloric I don't make it as often as we would like!!! It's also good as leftovers (if you have any)
