My whole family LOVED this cornbread. I didn't have it in there for quite an hour, probably due to the mix I used, it only took about 30 minutes. Regardless, it was a wonderful recipe and I intend to use it again!

I did this a little bit differently, but used the same recipe just added refried beans and diced tomatoes with peppers and onions. Also I treated it more as a casserole and layered cheese after everything. And homemade tortilla strips. It was a huge hit with everyone I invited over to try it, and not difficult at all! Great recipe and thanks for the inspiration!
