Quinoa with Veggies

We made a double batch of these because it didn't seem like one batch could serve four people. It was pretty tasty. We made half the quinoa with vegetable stock and half with water, and added garlic, zucchini and red onion. There was just enough for my husband and myself, plus leftovers for work the next day. We'll make it again, and switch up the veggies too!

Addictive Sweet Potato Burritos

This did not need a single tweak in my house. OUT of this WORLD! I like to double this recipe and freeze individual burritos to take to lunch. Holy YES!

Pumpkin Bean Soup

We had a small dinner party last night and featured this soup, and it was a huge hit! The only thing we changed was to puree it all with a hand blender. Creamy, hearty, perfectly spiced and delicious!

My husband and guests said this was the best dessert I'd ever made, and they ate it all too! I thought the batter didn't end up fluffy enough, but I had the mixer on its highest setting, so dunno?

Absolutely Best Brownies

My husband really liked these, but I would have preferred them to be much chocolatier. I've never made brownies from scratch before, so I didn't realise there wasn't as much chocolate as I'd have liked.

Balsamic Chicken and Fresh Mozzarella

I was totally surprised at how delicious this was. The only thing I did differently was to bake the chicken and add the mozz during the last five or so minutes. It's light and summery and EASY. I'm breaking this one out for the in-laws!

Ginger Salmon

My husband and I loved this! Super super tasty, so quick, and so easy it was hard to believe we were done preparing the fish before popping it into the oven. The added benefit of ginger helping with digestion just made me love this recipe more.

Army SOS Creamed Ground Beef

I think this was very tasty. Four stars because like everyone else, I changed some things. :) I sauteed some garlic and browned the beef in it. Also sauteed chopped onion in butter (maybe a handful) and added it at the end. Added freshly-ground black pepper and cut back to liquid to one cup--it just seemed like 2 1/4 was way too much. Maybe I'll give it a try one of these days though. All in all, this is a delicious recipe when it's the week of payday and you're running low on meals to stretch!

Caramelized Onion and Gorgonzola Pizza

We have made this several times and it's been so tasty each time! Sometimes we add asparagus on top--I know asparagus on pizza sounds weird, but it's actually delicious on this particular pizza. It looks pretty too.

Downeast Maine Pumpkin Bread

I'm someone who follows directions to a T and still messes up. But not with this bread! It was a perfect recipe--easy, quick, moist and flavorful, just dense enough, and delicious! I will definitely be making this again and again.

Sangria! Sangria!

This recipe is PERFECT. I've made this sangria several times and given the recipe away each time. The alcohol content is just right for a relaxing evening on the deck or your celebration of choice. I've also served the soaked fruit separately and that was a hit too. I definitely recommend this.
