Potato Curry
Great recipe... I added mixed veggies like someone else had mentioned and served over brown rice. Next time I think i'll omit the cayenne pepper b/c it over powered the curry flavor. I'll probably add onion and cardamom next time.

Four Cheese Macaroni Casserole
It was good but it wasn't as creamy as I had hoped for. The tomatoes added a great flavor. I'll proabaly look around for other recipes but might try this again. :)

Eggplant Burgers
Awesome variation to a normal veggie burgers. Cheap too! My kids were a little nervous about them but I'll make them again anyway. Thanks!
