Incredibly Cheesy Turkey Meatloaf
Best meatloaf ever! My family and I LOVED this loaf... they even went so far as to say it was the best meatloaf they've EVER had, turkey, beef, or otherwise! I used the dark meat ground turkey (94%). I made a few very minor changes from the original recipe: I soaked the breadcrumbs in the milk as suggested (they soaked it right up in about a minute). I used 8oz Colby Jack cheese (couldn't find just colby) and it was plenty - I think more would have been overkill. I cubed it a bit smaller than the recipe says. I also added a couple dashes of onion powder, and some grated carrot (I didn't measure, but a big handful or about 7-8 baby carrots). To the ketchup, I added about 1/4cup brown sugar - which was a good move! It was incredibly moist and delicious, everyone's asking me when I'll make it again!
