Vegan Sun-Dried Tomato Pesto
Loved it! So satisfying. Amount of basil (2 cups) confused me - packed or unpacked? So I "slightly" packed them, then decided it was too basily. I doubled tomatoes and garlic, and added a few more pine nuts, and it was perfect for me.

Apple Bran Muffins
Followed recipe exactly - YUM! Docked 1 star because muffins were fantastic the day I made them and the day after, but something strange happened after that. Tasted different, and texture changed. These are GREAT fresh, but don't make a large batch and plan on having them around for a week or so - they'll be yucky by day 3!

Pasta Siciliano
Great with a few changes - I roast the pine nuts and double the tomatoes and olives. A nice, fresh pasta.
