Banana Crumb Muffins
Great tasting muffins....but eat them the first day (shouldn't be a problem)!!! I found that the topping will soften up the next day and if you want that crunch...throw them back in the oven for a quick warm up...

Golden Rum Cake
Amazing, unbelievably great tasting cake! I used pecans, fat free milk instead of water in the glaze, Bicardi rum in the batter and Whalers Vanilla Rum in the glaze...this cake won't last over two days.. Do I have to share it with my family?

Caribbean Grilled Crab Cakes
This was a simple recipe, although I had to improvise a bit! I added a dash of smokey paprika, used panko bread crumbs, light mayo and served with Thai sweet chile sauce as well as store bought mango salsa... Due to conditions beyond my control, I had to bake my crab cakes in a 375 oven for 20-25 min. They browned up nicely and came out great. My husband raved about them (and he wasn't just being nice)... I'll make these again next week for a party without any fear of failure.
