Margaritas
I had a margarita and fajita themed birthday party for my son's 3rd birthday party. Tired of the same old pizza and cake routine, I decided to make fajitas and margaritas, so that all the grown-ups could enjoy themselves too! This margarita recipe was fantastic and a hit. I followed the recipe exactly and added some fresh lime juice and an ounce of OJ for those that wanted margaritas on the rocks. I also made several frozen batches with whole fresh mango chunks blended in, finished with a Chambord float on top, like one reviewer mentioned. It was amazing! The margaritas went well with the Avocado, Tomato and Mango Salsa on this site. Thanks for the great recipe.

Avocado, Tomato and Mango Salsa
I QUADRUPLED this recipe for my son's birthday party!! It was gone in under 30 minutes! Thanks goodness I had some decent store bought salsa to go with the fajitas I made as our main course! I used Roma tomatoes and canned jalapenos. They were great. Then I discovered I had run out of olive oil. My husband ran to the store for the oil, but after taste testing the salsa without it, I decided it didn't need it. It was fantastic without it. Even after squeezing out the juice from the tomatoes, the salsa was still a little soupy, so I just used a fine strainer and let some of the extra juice drain off. A lot of chopping involved, but so worth it!!!! Yummy!
