15-Minute Herbed Chicken

Sorry I save 5 stars for the very best but that being said, this is very fast and quite tasty. I recommend seasoning the chicken how you like (basil, oregano and the like). The 8 year old ate it quickly which is always a good sign.

Deep-Fried Turkey Marinade

I hate to sound like a broken record BUT this marinade is amazing. I did get to inject my turkey but (do to bad planning) we only got to marinate it for 3 hours (15# bird). It was still awesome. The skin was simply delicious and the meat was tender and juicy with such great flavors. We used Peanut Oil, approx. 325 degrees for right at 45 minutes. I cannot wait to use this again!

Tuna Casserole III

I followed the advice of others and added Penne Pasta and cheese. I used Pringles Light, Sargento Mexican Reduced Fat, and 98% Fat Free Cream of Mushroom Soup. Yes it is quick and easy. Yes it is filling. I will probably add some alternate spices next time for a little more flavor.

Twelve Minute Pasta Toss

I used the oil from the Sun-Dried tomatoes and added red pepper flakes. It is very easy and quick to make. It also has any possibilities to customize for personal preferences. I did omit the garlic powder, but I love how fast and simple this recipe really is. Thanks.

A Jerky Chicken

I only got to marinade the chicken for 1 hour but I was quite impressed with the flavor. I increased the quantities on everything (especially the allspice)and added fresh chopped ginger and ground nutmeg. It was cooked a little too long but the leftover marinade I reduced and drizzled over the top and served with wild rice. A really good starting point for Jerk chicken.

New Year's Day Black-Eyed Peas

Chicken with Asparagus and Roasted Red Peppers

The chicken was amazingly tender and juicy, next time I will add red pepper flakes and brown before poaching. Next time I will try a different vegetable other than asparagus (personal preference). Overall a very quick, easy and healthy meal. Thanks.

Easy Chicken Enchiladas

Tasty and easy to make or personalize. I used a Chipotle Salsa and marinated the chicken in a quick easy marinade (Worcestershire sauce, cider vinegar, soy sauce,chili powder, garlic, and hot pepper sauce). Will make again!

Drunk Chicken

Easy, great tasting recipe. I prefer a 4/4 rub with equal parts salt, pepper, paprika, and brown sugar. And yes, indirect cooking only!
