delicious! have never made potato soup before and this was so flavorful and had a great consistency. my bf scarfed it down!

I am a novice baker, and have always relied on the recipes that have hundreds of reviews...and am consistently disappointed. They are always too blah for my liking. I thought I'd take a risk and try a recipe that had only 24 reviews, because it sounded SO yummy and there aren't very many cashew cookie recipes out there. Cashews are my favorite, favorite, favorite, so I bit the bullet and made these tonight. Originally I was going to take them to work but they are too good to leave this house. My boyfriend and I will make it a priority to eat all of these ourselves, and give away a few to some VERY lucky friends. Because there isn't a ton of sugar in the cookie, it's not extremely sweet, and the rich, sweet icing is the perfect companion to the cookie. I was a little worried about "browning butter" because there is a fine line between browning and burning, but it was super easy!

First of all, I am a novice, so I feel like maybe I shouldn't be giving a recipe with so many stars such an average rating, however this recipe created one of the most averages cookies I have ever tasted. I needed something that I could make a TON of because I have several birthdays coming, and wanted to feed some neighbors and co-workers, so I tried this. With such extraordinary reviews, I thought it would be an extraordinary cookie, but it's not. It tastes fine, but that's about it. Perhaps I should've added salt, or done the various things that others uses had recommended, but I assumed that the ingredients listed on the recipe were all there for a very specific reason, so I followed everything to spec. To anyone who tries to make this cookie, I STRONGLY recommend that you follow the advice of some of the other users and modify this recipe in some way, otherwise, you will have a very average, very plain, and not so exciting cookie.
