Easy Tilapia with Wine and Tomatoes

We really enjoyed this easy idea for tilapia! We used a disposable foil pan then covered with foil & it worked great. Didn't measure the wine, just poured some over the fish & some in the bottom. We omitted the tomatoes since we served it with a side of grilled tomatoes. The combination was great! (cut tomatoes in 1/2, salt & pepper, drizzle with balsamic vinegrette dressing, sprinkle with parmesan cheese - grill 15 minutes) We'll make this again throughout the summer, and will likely add fresh mushrooms next time!

Sour Cream Pork Chops

I substituted chicken broth for the water/boullion, otherwise followed exactly. It tasted OK, but was too bland. My fiance hardly ate his. I chose not to add the cream soup that others suggested because I was looking for something different (I always do that w/ pork chops in the crock pot) Not a keeper for me, I threw the leftovers out.

Salmon Fillets with Creamy Dill

We're also not huge fans of salmon in my house, but are trying to eat more of it for the health benefits... this was a really easy & delicious recipe!! I only made 2 pieces of fish, so I made about 1/3 of the sauce. And I broiled it instead of baking. I had to move my rack down to the 2nd position b/c the sauce started to burn, but it worked out great. A definate keeper!

Herbed Mushrooms with White Wine

Superb!! I'll make for my next dinner party! I used Baby Bellas, and used butter instead of olive oil. I found an italian herb grinder (disposable, filled w/ herbs) in my grocery store for about $2.79 and used that, it was sooooo yummy, tasted more like fresh herbs than dried. A total hit & keeper- easy & delicious!

Chicken with Asparagus and Roasted Red Peppers

Yum! Easy, quick, and healthy!! Tasted great, nice & fresh. I only give out 5 stars to a recipe I could eat allll the time, so this is 4 stars for me, but really worth your time :) Followed exactly, came out perfect.

Crumb Apple Pie

This was my first pie attempt, so maybe it was me, but this one is not a keeper.... I did 400* at 35 min and the top was already VERY dark, starting to burn. It was a very ugly looking pie, although it did taste pretty good. (I used 20oz apples and only needed 2-1/2 of them, they are huge)

Baked Tilapia

Good & easy!! I followed the others suggestions: season fish, cut oil to 1/3 cup, use cooking spray in bottom of dish. I used a glass dish & so I couldn't broil... instead, for those last 5-8 min I turned the heat to 450 degrees... came out great!! The flavor is nice but not overpowering. I served with steamed zucchini & tomatoes and a baked potato. Yum!

Broiled Tilapia Parmesan

WOW, great one!!!! I cut butter in 1/2 and used light mayo, otherwise followed exactly. It was soooo good, very rich & flavorful. I served it for the first time on company, and it looked good and tasted even better! Very quick/easy to prepare. I served it with rice pilaf and fresh green beans pan fried, and crusty bread. Will definately make again & again.

Slow Cooker Rosemary and Red Pepper Chicken

This was awesome!!! No dry chicken if you add some liquid, my changes: crush the rosemary; 1 lb sausage, browned; 4 pcs chicken; white wine instead of vermouth; add 1 cup marinara sauce; add 1 (14 oz) can of chicken broth. I had to double the cornstarch mixture because of the increased liquid. It was really great, a definate keeper!

Heather's Healthy Oatmeal Surprises

YUMMMMMM! I also used white flour, and took someones suggestion for toasted pecans (3/4 cup), white chips (1 cup), and dried cranberries (3/4 cup). Took to a picnic and they were a huge hit. [to toast the pecans, after my oven preheated, I put them on a cookie sheet and baked for 8 min, stirring every 2 min]

Baked Ziti III

Sooo flavorful! My husband, who usually has no opinion on dinner, said "this is really, really good stuff". Definately need a bigger dish!! I ended up pouring mine into a 9x13 after the casserole dish overflowed :) Keeper!!

Empanadas

I am in the middle of making these for the 2nd time in 2 weeks. Fabulous! They're not much to look at, but boy are they good. They are like tiny little pieces of pie. I got rave reviews on them. They are a little more work than a standard cookie, but I noticed I got faster at it the 2nd time around. USE PARCHMENT PAPER to line your cookie sheet, no mess to worry about!

Chicken Jerusalem I

I took a chance and made this for the first time for company- it was EXCELLENT, the company talked about it all night and asked for the recipe! So easy and so delicious. Only changes: substituted cr. of chicken and baked for 45 min. Definate keeper.

Lemon Parmesan Spaghetti

Yummy & easy. I left out the zest since some said it was too lemony. It is a little dry after you bake it, not sure how to fix that. Definately adding some grilled chicken pieces would good. I'll keep this one!

Hamburger Soup II

I made it exactly as is, and it was wonderful except it needed more liquid! Very flavorful from all of the veggies! Since there are only 2 of us, next time I'll cut everything in 1/2 and leave the soup/water portion as is. I just served with bisquits and it was great.

Hot Fudge Ice Cream Bar Dessert

Fast & easy for sure. Tasted good, like an ice cream sundae. (FYI the chocolate sauce makes it kind of messy/sticky) I took it to a kids pool party and it went over very well. Kids loved it and parents asked for the recipe. I used caramel topping instead of the peanut butter & added rainbow sprinkles to the top.

Hearty Tuna Casserole

Enjoyable! I did make several modifications to suit our tastes.. 1 can of tuna instead of 2, no celery, no zucchini, no tomato. Less mustard, more cheese, added 1/4 milk as others suggested, would do 1/2 cup next time, it was a little thick. Baked covered for first 15 min, then uncovered last 15. Served with biscuits. Definately will make again.
