This is so easy to make and so yummy! I used a rotisserie chicken from wal-mart and doubled the cilantro, because we love cilantro, but other than that I followed recipe exactly! This soup reminds me of On the Border's tortilla soup! I put shredded cheese on top, a spoonful of sour cream, and instead of making the tortilla chips I just used Misson brand tortilla chip in the strips shape. I garnished this with a few avocado wedges which is delicious in the soup! I will be making this again!

This definitely would've been a 5 start rating, however, my cookies spread so much when I baked them that you couldn't tell what some of them were....I just did some carving with a knife to fix it tho, then decorated them with a buttercream frosting. YUM. 5 stars for taste, no doubt. I thought they were plenty sweet, especially with all the frosting on top! I don't know why they spread so bad. I did double the vanilla, but other than that I followed recipe exactly. I will use this recipe again for sure, maybe next time I will add a bit more flour. Dough rolled out and cut just fine for me, however, rolling on parchment paper was key, and dusting paper and rolling pin with confectioner's sugar (great tips from other reviews). My husband loved these and he usually doesn't like sugar cookies!

I am eating leftovers right now of this and it's still delicious. Husband approved, this will stay in my regular recipe rotation. To me it's like enchiladas without the work of rolling them up! Easy, quick, I made the recipe as-is and we loved it! Yum!
