About this Cook
I've lived in the states for 11 years now. I'm married to a Bulgarian lol and God has blessed me with 2 beautiful kids, 7yrs boy and 1 yrs girl. Being Albanian and dealing with two cultures is not an easy thing to do, but having a lot in common foodwise has helped a lot. I love to cook and they love to eat. My grandmother and Mother are exellent cooks from whom I've learned more than I could tell you but I always had the tendency to experience with recipes and most times I've succeded.
My favorite things to cook
Oh, I'd cook anything. From a meal that takes hours to prepare to a meal that takes only minutes. Usually I stick to our traditional foods, Bean soup, stuffed vegetables, a lot of desserts, salads, and meat entries which are very imoprtant to us.
My favorite family cooking traditions
Well, around New Years, my mom would cook baklava from scratch for us and 6 other nighbours, filo and everything with her bare hands ( which by the way is something that I haven't been able to do for years) We live very far from one another, and the only traditions here are with my friends and their families. There is noone just yet that has tried my food and hasn't asked for some to go and the recipe...
My cooking triumphs
Triumph I call when everyone is eating and eating good. And that is everyday for me, unless otherwise hahhahahaha
My cooking tragedies
Oh, I was making stuffed eggplants about 3 yrs ago, and working long shifts at work, I said to myself I'll just put it in the stove, I'm just gona close my eyes, not sleeping, just closing my eyes. The next thing I know, I was pretending that I wanted them a little well done at dinner table. And I've made once Shendetli, Dessert with honey and pralines which is very traditional, and I am good at it. But it so happened that instead of sugar I put salt, Oh My God, can u imagine a $30 dessert went straight to the trash can

Eggplant Parmesan II
this recipe is used in Eastern Europe for centuries. It's yummy and nutritious in the same time and it teaches kids to experiement with vegetables. I read some of the reviews and someone said about putting the eggplant in salt to take out bitterness and someone did not agree. Well...Personally we cook at least 3 times a week eggplant, and the way my grandmother taught my mom, and my mom taught me eggplants are cut at the bottom and then u take out 4 thin slices of the skin evenly all around the eggplant. You cut it thinly or however the recipe calls for. If you're frying eggplant u either put in in a container with cold water and salt, or let it sit sprinkled with salt in the sink in the container for at least 30-45 mins before using it. then rinse well and pat dry. These methods are used to take out the bitterness of the eggplant so it doesn't interfere with the other herbs we use in our dishes, but the mos imoprtant reason we do this with frying eggplants because it does not soak up a lot of oil. Thank you for this wonderful recipe, and I know from experience you can play with it add anything you want to it and still enjoy a great dinner
