Cinnamon Nut Coffee Cake
This makes a VERY sweet coffee cake. If that's not your thing, I'd move along. I might try this again with some modifications to mellow out the sweetness a bit. I'm still giving it a four because it's easy and it does taste terrific!

Winter Energy Cookies
These should be called "Everything Cookies". Want to make cookies, but can't decide what kind to make? These have a little bit of everything! Peanut Butter, Oatmeal/Raisin, Chocolate Chip, Molasses... Nice recipe and no need more modifications to me. Well done!

Crustless Spinach Quiche
For some reason, I don't have a pie pan, so at the suggestion of another user, I made these in muffin tins. It filled 12 muffin tins perfectly. This is a terrific recipe and sets up very nicely, although I definitely think it's too spinach-y and I love spinach, so it's not that. I had to use Monterey Jack cheese instead of Muenster (which is obviously more mild) because I couldn't find shredded muenster anywhere and shredding it myself seemed difficult since it's so soft. In retrospect, I should have used the muenster, but I would have used 2 cups rather than three. Next time I'm adding bacon and decreasing the spinach content just a bit.
