Chicken Vegetable Barley Soup
Very hearty and great flavor. I only used 1 tbl of butter, used canned mushrooms vs fresh and pearled barley instead of quick cooking barley. Also added 1 tbl of dried thyme to give it a little more depth.

Herb Rubbed Sirloin Tip Roast
The rub was very tasty - following other reviews, I put the roast in a ziploc with the rub, a little extra fresh garlic, and let it sit for about an hour - this was not long enough and next time I will foodsaver the meat with the rub on it to allow it to seep in, let it sit for 3 hours at a minimum and maybe even double the amount of rub to increase the amount of drippings. The rub flavor was fantastic and worth repeating on other cuts of meat.

Peanut Butter Vegetable Chicken Soup
Would have given this a 4.5 if there were half stars! I was nervous about the peanut butter also but went for it. I'm so glad I did - it was surprisingly subtle and gave the broth a full flavor. I poached the chicken using onion and garlic, used all chicken stock for broth and veggies I had on hand. Next time I will increase the amount of chicken to make it even more packed with protein and add some red pepper to give it some heat.
