About this Cook
I'm 26 and living in Hawaii. I'm in the process of planning a move to Texas (boyfriend is in the Army) and am trying different Tex-Mex recipes to prepare myself for the change ;-) Once I get there I hope to begin grilling and planting my own herbs and tomatoes.
My favorite things to cook
Desserts! Cheesecakes and cookies are my favorite. I also enjoy cooking healthy, Italian, Mexican, vegetarian...and trying new recipes.
My favorite family cooking traditions
I grew up eating A LOT of mac & cheese. I'm talkin about the best kind...the one out of the box! It's now transitioned into my own tradition of adding broccoli to Kraft Deluxe mac & cheese. Next to cheesecake, this has become the number one requested food by my boyfriend.
My cooking triumphs
Triple Layer Chocolate Cheesecake. To die for and it was my first time using a springform pan so many years ago! After making it for my boyfriend's birthday last year one of his coworkers paid me to make one for him and his wife!
My cooking tragedies
The first time I tried to make Cuban black beans and rice the way my bf's mom makes them they turned out so bad I cried! There was also the time I made an Irish cream cheesecake for my work's Thanksgiving pot luck and added extra Irish cream for more flavor...people teased me that they were getting drunk off of it!

Cucumber Raita
After spending a lot of time in India you learn to loooove raita! But this is definitely not Indian raita. I should have known when I saw the mint, but I figured I'd try it anyway. The only change I made was to dice the cucumber. It didn't taste bad, it was just very minty and not what I was looking for. I'll continue to keep my eyes peeled for a good mixed raita recipe (cucumber, tomato, onion).

Lentils and Rice with Fried Onions (Mujadarrah)
I've had something similar at a restaurant except it was served with bulgar rather than rice and it was great. I thought this would be too, but after cooking, it was a giant pile of mush! Maybe it would help if there were measurements for the liquid. I also put a splash of cinnamon in it as many suggested but even that was over powering...a little bit goes a long way!

Jamie's Black Beans and Rice
This was easy to make and the boyfriend liked it enough to have a second helping, but I thought it was kind of gross...beans and (I used fresh) onions and peppers swimming in sauce. I used Las Palmas mild enchilada sauce, which I love for enchiladas, but it over powered the beans and made it way too runny. I'll stick to my usual: dried black beans cooked with green pepper, onion and ground oregano. Thanks for the idea though.
