Chocolate Mint Cookies I
Delicious. I love anything mint. I followed the advise of another reviewer and mixed in by hand a package of Andes mint pieces after the dry ingredients were added. Much easier than cutting and frosting the cookies and the taste is just as good, also the bits of green mint that show through are attractive. I forgot to chill the batter first, just baked the cookies right after mixing. I also used a small cookie scoop rather than rolling the dough, another time saver. They look just fine to me and more important, they taste wonderful.
