Apple Crisp II
Excellent! I used organic Granny Smith apples. As others have said, the sugar and cinnamon balance out the tartness. Nice balance of textures, great flavor, wouldn't change a thing. Goes well with Prince of Wales tea.

Black Bean and Corn Quesadillas
Very tasty, but the serving measurements and nutritional info are off and Syrah is too heavy a wine to pair with it. If you're using 8 tortillas and are using 2 tortillas per quesadilla, that is 4 servings, not 8. However, I found it much easier to use one tortilla per quesadilla and just fold it over in the pan. I can promise you that even with just one tortilla, it will be much more than 363 calories because 2 tbsp butter is 200 calories right there. I didn't use chopped onions, either, as there were plenty in the salsa. As for the wine, I suggest a somewhat fruity Riesling like Kung-Fu Girl.

Barley Bake
Tasty, with a very nice texture. Try a little freshly grated parmigiano on top when you plate it. Also, it might be a little bit salty for those who don't use salt in their cooking or who are sensitive to sodium. I didn't use the 1/4 tsp of salt and didn't miss it. I suggest using one can of low-sodium broth, one can of regular (or both low sodium and then use the 1/4 tsp salt).
