Tortellini Bake
I made a few changes, but this is excellent! My son thinks everything should have meat, so I browned 1/2lb. bulk Italian sausage. I also added 3 cloves of minced garlic, sprinkled a little dry parsley and oregano and used about 3/4 c. mozzarella and 1/4 c. parmesan cheese. I didn't have light cream, so I used 3/4 c. fat free half and half. I sprinkled about 2 Tbsp. Panko Bread crumbs mixed with some parmesan on top. Very yummy!

Hamburger Stroganoff
I thought this was very good with very few changes. I did not freeze any of this as we needed 4 servings. I was looking for recipes to use up lemons (too many on the tree this year) and this worked well. I sauted fresh mushrooms with the onions and garlic in a little olive oil then added the meat and browned. I added 1 cup of water to the mix then added 1 1/4 cups dry whole wheat pasta spirals. I cooked it until the noodles were tender, about 15 minutes. I added 1/2 cup sour cream and about 2 Tbsp. 1/3 less calorie onion and chive Philly cream cheese because I needed to use it and it sounded like it would be good in it. It was! I sprinkled a little parmesan and it was very quick, easy and tasty.

Lemon Square Bars
We have so many lemons on our tree this year I've been trying to come up with ways to use them. I have not made lemon bars in many years and couldn't find my old recipe so searched through All recipes and I'm glad I found this one. I basically followed the recipe, making some cuts to try to make them a little "healthier". I followed some of the changes from other members, decreased the butter to 3/4 cup, 3/4 cup confectioners sugar, added 1/4 tsp. salt and added 1 tsp. baking powder to the crust, because I goofed! It was great anyways. I also added 1 tsp. baking powder to the filling, used 1 1/4 cup white sugar, 1 cup fresh lemon juice and 2 Tbsp. lemon zest. I cooked the crust at 325 degrees for 18-20 minutes. I cooked the filling about the same time. It was a little bit brown and I thought I had cooked them too long, but they were perfect! After they were cool, I sprinkled them with powdered sugar. I'm sure they would be great as written, I just wanted to lighten it up a little bit. Great!!!!
