The Best Red Enchilada Sauce
I followed the directions exactly and this turned out really good. I would recommend adding crushed red pepper before blending to add some heat to this as its very mild.

Tangy Vegan Crockpot Corn Chowder
The only reason I rate this with three stars is because my wife seemed to like it. I'm not sure what it was about this, weather it was the texture or the flavor but I did not enjoy this recipe, sorry.

Butter Chickpea Curry
This is a really good recipe, very similar to what you might get at an Indian food restaurant. To make it a vegan dish I substituted plain soy yogurt for the milk and about 1/4 cup of water as the yogurt made it a little too thick to stir well.
