Bread is not my forte, but love bread and keep trying. I got lazy when baking bread and made one big loaf out of a triple batch. When I took it out of the oven everyone's eyes got big. It was huge and hilarious. I got out the electric carving knife, and gave my 2 girls a huge chunk to take home. Once was enough of doing that.

Broccoli with Roasted Red Peppers
A winner! I used olive oil instead of butter. So fast and easy. I liked steamed flavor of the broccoli. Normally I would saute them all together.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta
I thought this was very good. I opted to skip the bacon. I think it is very important to have equal sized breasts. When I do this again, I will add chicken stock to the pan, cover it, and cook for less time.

Merritt's Butternut Squash Gratin
Definitely a repeat recipe in our house. Next time I am going to try mixing half of the cheese mixture with squash. Using it all on top was a little thick.
