I'm a wife, Mom, & RN. I have 3 kids, 19, 17, & 7, so my cooking has to satisfy a broad range of tastes! I've been married nearly 21 yrs. and have helped my husband's bland taste awaken. He's started venturing out, trying to cook things he's not tried before! We love this website and look up ideas & recipes at least twice weekly!
My favorite things to cook
Living in Phoenix is great as the whole family loves Mexican food. We certainly have our share of great restaurants to try, but I love to experiment at home as well! Our staple foods are beans, rice, tortillas, & chicken! There's so much that can be done with those four ingredients! I also have the luxury of living in a warm climate, so many produce items are fresh & available a lot of the year.
My favorite family cooking traditions
While growing up, our family tradition was Pillsbury Orange Rolls, bacon, eggs, o.j. or milk on Christmas morning! I've brought that into my own family. In addition, our kids expect egg nog to magically appear in the refrigerator by around Thanksgiving! We always have a traditional Thanksgiving dinner with turkey, etc. For Christmas, it's always a really good ham, glazed, au-gratin potatoes, green bean casserole, & Hawaiian brand rolls!
My cooking triumphs
I've recently learned how to make Mexican restaurant-style refried beans. In addition, I am becoming more proficient at "throwing" things together based on ingredients I already have, and coming up with some really good meals! I hope to make a good home-made tortilla soon!

G-ma's Rice
Living in Phoenix, we have had a chance to try MANY mexican / spanish rice dishes! However, we feel this recipe really captures the "true" taste of how it's done! I used real minced garlic, slightly less pepper, and the exact amount of ground cumin. Be careful to not place more cumin than recipe calls for as it would be too strong a flavor & overtake the rice. You can add salt to taste per individual taste after it's cooked. We have declared this as our favorite family rice side dish! Thanks for sharing the recipe!

In a family filled with indigestion issues, we are VERY HAPPY to say, this was a hit! No one with problems after the meal! Even our picky 7 yr. old had 3rds!
