About this Cook
I have been a stay at home mom since the birth of my second child (eight months)I love cooking for my family.
My favorite things to cook
I like to try new things, and I like to be thrifty (but healthy) with my meals.
My favorite family cooking traditions
There are several recipes that I used that have been passed on by people I love. I live 14 hrs from any of my family and when I use these recipes it feels like home.
My cooking triumphs
When I made my first marshmallow fondant covered cake I was so excited. It turned out great!
My cooking tragedies
The last time I made a cobbler to take to a dinner party I used someone elses recipe. After I put the fruit mixture in I mixed up what I thought was the topping and baked it waiting for it to brown on the top. It never did. It stayed runny. I took it to the party (because they were close friends)and we just dipped it out and ate it. It was ugly but tasted good. When I got home I looked at the recipe again trying to see what I had done wrong and there was a whole other step (the topping) on the back of the card. I thought the the second step was the topping and the juice off of the fruit would be the filling.

French Bread
Fantastic! This is the second time I have ever made any type of yeast bread the first time was a disaster. (hamberger buns that came out like heavy biscuits) This was so easy. I even made a couple of mistakes and it came out great. (forgot to grease the pan. I just used cornmeal and I used a whole egg for the top instead of the white. oops!)It looked like it was from a bakery.

Marshmallow Fondant
I have been making this for a couple of years, but I have never used crisco or butter. I turn the marshmallows in a little water before microwaving, stir in as much powdered sugar as possible. If you put it on the counter to knead it put powdered sugar on top and bottom so it doesn't stick to your hands. Also I bought some plastic off the roll in the fabric department. (like you would use to upolstered dining chairs) To cover a cake you can roll out on plastic and it is easy to invert it over the cake and peel off. (Put sugar or cornstarch on plastic before rolling)

Asian Orange Chicken
I made this while my mother-in-law was visiting and she would not leave until I gave her the recipe. It was fantastic! I did add a little sesame oil and I serve it with rice that I cooked with orange juice and a a little ginger and a nice garden salad. I will make this with pork next time because my hubby won't eat chicken and I want him to be able to enjoy it.
