Hi! I'm a 35 year old single mother. I live just outside of Houston, Texas in a great suburb named Katy. My daughter, Morgan, is 8 years old. I'm a school instructional specialist in Spring Branch ISD, and I just graduated with my Masters of Education in Administration. I love to travel, go to the opera, visit wine countries, read, and watch the Food Network or HGTV in my spare time.
My favorite things to cook
I LOVE to bake. We always have homemade cookies, pies, cakes, or cobblers in my house.I make all my own jams, jellies, and preserves. My daughter is so spoiled. Once we ran out of jelly, so I bought some at the store to hold us over. She tasted it and told me it tasted rotten. Funny. I also love to make casseroles. I enjoy, when I have the time, making real gourmet dinners.
My favorite family cooking traditions
Every Wednesday night is Chicken Enchilada night. The whole house looks forward to it. I now even have friends who just show up on Wednesdays to eat it. I haven't posted it on AllRecipes yet, though. I think I'm afraid of critism. We also make yummy black-eyed peas on New Year's Day, and my entire family comes to eat my homemade cornbread dressing at Christmas - another recipe I haven't posted.
My cooking triumphs
I love southern cooking. My dad did all the cooking in my house, and he was a very traditional southern cook. While he was alive, I learned almost everything from him. However, he passed before I could make his YUMMY cream gravy. After a few years trying, however, I finally figured it out. My mom is so happy when I make it. It reminds all of us of him.
My cooking tragedies
OMG...One time I was trying to make this dark ale bread for a medieval feast. It was the absolute worst thing I have every baked. I have laughed about that for years. I swear, it was so horrible. I also tried chicken and dumplings - once. The dumplings were like glue. It was truly horrible. I've been afraid to try again ever since.

Mom's Raisin Oatmeal Cookies
I was so worried about these cookies, because the dough was runnier than I'm used to for cookie dough. HOWEVER, the cookies are WONDERFUL!! I absolutely love the cake-like texture! They aren't too sweet...they are just perfect. This will be my go-to oatmeal raisin cookie recipe from now on. For a good friend of mine, I'm still looking for a crunchy oatmeal cookie recipe. This cookie, however, is perfect for me!

Slow Cooker Chicken and Dumplings
I have been looking for an easy and successful chicken and dumpling recipe for a while. This is it! I finally had dumplings that were not only edible, but yummy! Everyone in my house loved it, and I have some picky eaters here!

Carol's Arroz Con Pollo
So, so, so yummy. I have a friend who loves it when I make this so much, that he calls sometimes just to ask if I'll make him some to take to his house. He's even offered to pay. LOL. My family loves it as well. Thank you for such a great recipe!
