There are only 2 of us so i adjusted the recipe to serve only two, i used 2 chicken breasts (pretty good sized ones, half a package of ranch dressing mix, and just a little more than a 1/4 cup of italian bread crumbs). it was wonderful, my husband gobbled it up and asked for seconds! this one is going in the weekly routine, it's easy and i usually have the ingredients on hand!!

my husband loved this! and he is a very picky eater. i had to use regular milk instead of buttermilk because i didnt have any, but it turned out great and will definitly cook this again! it's very easy!

My husband loved this!! he even took it to work for lunch the next day!! huge huge deal!! i used Rotel mild tomatoes and green chiles, think i'll use the original or even next hotter one just to add a kick. we also put fresh chips on the plate and then served the casserole on top, added a little crunch! Most definetly make again!
