Downeast Maine Pumpkin Bread
I totally loved this recipe. I tried to make it more healthy so I used whole wheat flour instead of regular, 2 cups of bown sugar instead of the three cups of white sugar and used 1/2 cup of light margarine, 1/4 vegetable oil and 1/4 applesauce instead of 1 cup of oil and it came out excellent. It was moist and rich as I wanted.
