Spinach Stuffed Chicken Breasts
This dish was absolutely delicious!! I made it for 18 guests, which included some children, and they all loved it. I covered the chicken with foil while it was cooking. When there was about 10 minutes left, I took off the foil and put the chicken under the broiler to brown a bit. The chicken made it's own sauce in the pan which I spooned on before serving. I don't know if the spinach wasn't drained enough or the foil helped create the sauce but it wasn't dry at all. I had to email the recipe to most of my adult guests because they loved it so much!
