Impossible Coconut Pie II
Doubled the coconut, only 2 eggs, decreased sugar to 2/3c, 60 min= super coconutty goodness! Not too sweet, but incredibly rich. Sort of like a moist & creamy macaroon...yum! Fantastic and way too easy not to try.

Roasted Potatoes with Greens
Yes- these are that good! I just now ate it as a meal in itself- very hearty and I used a ton of spinach (it really does shrink a lot)... yum! Thanks for a truly 5-star recipe!

Bran Flax Muffins
Perfect- not too sweet, not too "bran muffin". I absolutely loved them and keep them in the freezer- pop one out and zap it for a few in the microwave and it's breakfast on the go! Even though my 6 and 8 year old were not equally thrilled, I believe this recipe is a 5-star combo of tasty and healthy- kudos Jane!!
