Hello all, I recently got married to the love of my life and work in fire rescue communications, which are 12 hour shifts at night, so on my off days, I relax by trying new homemade (or close to it) meals and such. I am still learning as there is alot I have yet to learn, lol.
My favorite things to cook
I really love making roasts with all of the trimmings. I have a passion for slow cooker meals as well. I also like trying casseroles but have not found one that really sticks yet.
My favorite family cooking traditions
My Grandmother cooking a roast every Sunday afternoon. My mom's special candied yams on every Thanksgiving
My cooking triumphs
Cooking an entire Thanksgiving dinner for the family after working 12 hours of work and getting off at 0630 in the morning. As soon as I got home that morning, I started cooking. It turned out delicious and the fatigue was worth it, lol.
My cooking tragedies
Well, there are too many of these to mention at this point, lol

Angela's Awesome Enchiladas
Wow! This is an awesome dish! Thank you! The only change I made was to cook the chicken and onions in the crockpot for several hours and then shred the chicken. Upon replacing the chicken into the pot, i added the rest of the ingredients excluding the soup mixture and continued to simmer for several more hours. I followed the rest of the recipe as is. This will definately become a regular!! :)

Dutch Apple Bread
Thank you for this delicious recipe! I made a few changes as I didn't have nuts and didnt have time to make the frosting. I added 1/4 tsp nutmeg, 1/2 cup brown sugar and 1/4 tsp Cinnamon as well as 1 ripe banana to the dough. Excellent!!

Fish Tacos
Absolutely delicious! The only difference I made was to grill the fish instead of frying. Yummy!
