Curry Pumpkin Soup
Such a great, filling, and tasty soup! I halved the recipe and added half of a diced yellow onion and a teasopoon minced garlic to the butter. Then I used 1 tablespoon spicy curry powder and 1 tablespoon regular curry powder with the flour mixture. I also used low fat coconut milk instead of the cream. And lastly, after serving my portion in a bowl I added some potatoes and brocolli in for more substanance. But boy this was deeeelicious.
