I didn't grow up with butter, for my mother it was strictly margarine.  Although I'm sure her belief that margarine was better for us than butter had something to do with us being a butter-free home, I think that her Wisconsin upbringing had something to do with it as well.  This sounds a… MORE

About this Cook
My favorite things to cook
Bread and ethnic foods. I tend to enjoy lighter fare.
My favorite family cooking traditions
When I was about 8 I asked if I could cook our family's Christmas dinner and my mom agreed to let me. I chose to serve lasagna and mashed potatoes with oatmeal cookies for dessert. The unconventional meal has become a sort of tradition for our family.
My cooking triumphs
:-) Any time I know that what I've made is better than I could get at a restaurant.
My cooking tragedies
I have failed repeatedly at making pita bread and English muffins. Regardless of how simple the recipes look, they never turn out correctly for me.

Chicken Chile Verde
What a disappointment. Bland. Will definitely not make again.

Jamie's Black Beans and Rice
We really enjoyed this! Used 2 chopped yellow peppers and a small sweet diced sweet onion. Instead of a can of enchilada sauce used 10 oz of tomato juice and 2 Tbsp of chili powder. Made with brown rice.

Couscous Gourmet
Very simple, but tasty. Didn't have the couscous with flax seed so substituted whole wheat couscous with a roasted garlic and olive oil flavor. Used orange pepper instead of red. Omitted butter.
