Southwestern Egg Rolls
This was amazing - I used egg roll wrappers instead, put in a pound of chicken, and I ended up with about 25-30 egg rolls. For the chicken though, I cut it into 1 inch cubes and seasoned it with chili powder, garlic powder, EVOO, and sometimes a little sriracha sauce and let it marinate before I cook it, then I dice it up. It adds a LOT more flavor that way. I also followed another reviewer's idea of leaving out the spinach.
I also make just the filling and then add a dash or two of soy sauce and roll it up in taco shells and eat it for dinner all the time :)
