Hearty Beef Enchiladas
This was tasty, I based my enchiladas off this recipe, I didn't have the recipe handy to make them, so I went with what I remembered (surprisingly I remembered everything and then some) :), it was the first time I'd ever made enchiladas. I did add green chilis and jalapenos as my hubby and I like our mexican food hot and spicy and I used corn tortillas instead of flour since my Hubby prefers corn. I will be making this again!!!

Chocolate Mint Dessert Brownies
This was quite good! I took others suggestions and made a boxed brownie mix and I had to improvise on the mint middle since I only had peppermint flavoring. The mint middle was really dry and crumbly so I used milk to smooth it out and make it spreadable but it turned out excellent! and for the top I microwaved the chocolate chips and butter, stirring every 30 seconds. my husband is a chocolate mint fiend and loved this!

Quick Tuna Casserole
this was pretty good and simple if you are looking for a quick easy dinner, I did do a few things different, I mixed everything together and also added shredded cheddar cheese put into a baking dish added more cheese on top (did not have potato chips or crackers) and baked at 350 for 20 minutes. My husband went back for 2nds so I will make this again.
