Married for 8 years to a great guy (Henry) who loves my cooking! Mother to 6 wonderful kids, Kayleigh, Hannah, Bradley, Trey, Emma & Jack. I've worked for a government contract for 12 years. Graduated from Douglas Anderson School of Arts in Jacksonville, FL. I love singing in the car, playing with my kids and ofcourse COOKING!
My favorite things to cook
Italian, sunday breakfast, romantic meals for my husband, "cook out" foods, casseroles. I love cooking for my family.
My favorite family cooking traditions
Christmas cookies with the kids, breakfast casserole on christmas morning, ham on easter, mac n cheese on Sundays.
My cooking triumphs
Alfredo sauce. It took work, but now it's perfect everytime!

Sweet potato pie. I just can't get it right....ever!

Onion Chicken in Balsamic Sauce
Oddly enough, the day I read this recipe I too was wondering what to make with the legs & thighs that I thawed out! And i had all of these ingredients except the tomatoes and balsamic vinegar, but I had a whole bottle of red wine vinegar. It came out wonderful. It's perfect for a quick weeknight meal!

Moussaka
I'm not sure if anyone else had this problem, but my eggplant absorbed the oil like crazy! I went through a lot of oil trying to fry the eggplant, so it ended up coming back out in the baking process, leaving the final dish very loose & oily. I followed the suggestions of adding egg white to the sauce and yokes to the meat but it still wasn't firm enough. On the upside, the taste was very good. I will try making this again, but will brush the outside of the eggplant with oil and prebake them instead of frying. I love the taste, so i'm going for it again!!

Dirt Cake I
This recipe was a hit at my halloween party! I layered everything in a 9x13 glass pan and made a graveyard on top with lollipop ghosts and cookie tombstones. Turned out great, thanks!
