About this Cook
My name is Rena, my family is Greek and originates from the island of Cyprus. I am 46 years old, and am just now beginning to try my hand at cooking. I guess better late than never, so I am trying some really easy things first and will work my way up.
My favorite things to cook
I love to cook Avgolemono soup. Avgo=egg, lemono=lemon soup. That is actually one thing I am very good at cooking. I like to make mine extra lemony.
My favorite family cooking traditions
When I was a little girl, I remember standing w/my mother at the kitchen counter helping her make Greek cookies or Baklava, sometimes I would get in the way, so she would hand me a handfull of dough and tell me to go play.
My cooking triumphs
I have mastered the are of making a really good creamy Avgolemono (egg-lemon) soup. I should be adding more to this section as I improve my cooking skills.
My cooking tragedies
Tragedies, other than forgetting I had steaks on the outdoor grill a couple of times and charring the steaks, nothing too tragic.

Duke
This is very good. However, instead of using just regular plain Yogurt, use Greek Style plain Yogurt, it is much creamier and thicker than regular American Plain Yogurt.

Hot Artichoke and Spinach Dip II
I have made this twice, both times, I used sour cream instead of mayonaise, both times I made a double batch. The 1st time, it came out good, but too thick. The 2nd time, I added about 1/4 cup more sour cream and the consistency came out much better! All in all, this is a wonderful recipe!!

Greek Avgolemono Chicken Soup
Avyolemono is my favorite soup and we love it lemony. Even my boyfriend who has no Greek in him at all, loves it extra lemony. I use usually make 2 large pans at a time (they don't last long), I actually use a whole cup of lemon per pan, and I shred the chicken breasts into the soup. I have tried both Orzo and regular rice. My sister makes both kinds every Easter, and I prefer the regular rice. My favorite rice is the Uncle Ben's Converted rice.
