Pumpkin Cake I
Fantastic fall cake. I replaced the oil completely with applesauce and used a little (maybe 1/4 cup) less sugar than called for. Probably would have been good with just 2 cups of sugar. I also replaced the flour with sorghum flour (gluten free) which worked just fine. The blend of spices was delicious, especially as I am a big fan of fall spices. I whipped up a little cream cheese glaze to drizzle over it which turned out okay. It didn't add much of a cream cheese taste, just sugary, but it looked nice. Roommates liked this cake a lot.

Bulgur Chickpea Salad
This salad has great potential, but I highly recommend decreasing the parsley significantly. It was very overpowering. It was otherwise an excellent salad. Some finely chopped celery would have been excellent in it as well. I will definitely try this recipe again and apply these changes and I am confident it will be fantastic.

Millet-Stuffed Peppers
Definitely not bad. Followed the instructions of others and added some more spices to it, which was good. I also topped it with sour lean and that made a big positive difference.
