Sam's Famous Carrot Cake
This was an excellent base for a healthy carrot cake! I cut out a 1/2 cup sugar (the pineapple makes the recipe sweet enough) and instead did 1/2 brown and 1/2 white (to add a richer flavor) Also, I substituted 1/2 oil for applesauce and used reg. milk instead of the buttermilk. It turned out to be a lovely recipe that yielded a lot! Great for freezing and saving for a rainy day...if there's any left, that is!
