Hot Mexican Spinach Dip
Well this is officially a hit! People haven't been shy about asking me to bring this to pitch ins. I use about half pepper jack and half cheddar jack, hot salsa, and I skip the evap milk, adding a couple tablespoons of reg milk if needed. It depends on whether you use a chunky salsa or more liquid-y type. I love this dip.
