About this Cook
I am happily married and have just my husband and I to cook for. We move around a bit due to his job so I try to perfect something from each place. I learned the basics of seafood in Seattle, perfected my biscuits and comfort food in North Carolina and am now trying to get a hold of German cooking. I got the schnitzel down but I can't seem to get the desserts!
My favorite things to cook
I love cooking all things dessert. I don't think I've run into many soup recipes I didn't like. And besides that I'd have to say anything that my husband enjoys. He likes my chicken enchiladas, rice and beans most. He knows he's got me in a good mood when he gets that for dinner!
My favorite family cooking traditions
I was raised on tex-mex. I never really thought I was any good as a cook when I first married. I thought that it was just my husband being nice. It wasn't until I had other people over that I realized that I actually did learn a thing or two growing up! I refused to learn how to make tamales growing up (long story, don't ask LOL) and then I went and married a man who loves them. Now that's one of the things I'm trying to perfect.
My cooking triumphs
My first Thanksgiving all by myself after 3 years married. Before that I had dodged the bullet by making sure to get invited over to a friends house! LOL Once it was done though it was OK. I think I was just hyping myself up too much.
My cooking tragedies
Baking my first cake without my mom when I was in the 5th or 6th grade. My best friend and I accidentally got the sugar and salt mixed up. Not Good! But then again who has containers of salt that big! LOL

Homemade Flour Tortillas
I love love love this recipe! I've been living in Germany for the past few years and I didn't have access to White Wing flour. All I had was the Quaker Oats brand. Um...yuck. After trying several different recipes this one topped my list. I make LOTS of tortillas. I've haven't used lard since I was living at home so I stuck with butter. I've noticed since moving back that different brands have different amounts of salt though. When using Challenge butter I up the salt in the recipe to 1 1/4 tsp. when using Rose Valley I can stick with 1 tsp. and they freeze beautifully also! Since its just my husband and I, I lay them out for a bit to cool to room temp. If you try to freeze them while still warm they'll stick together. That was a mess. Lol. Just a single meals worth in a freezer bag with most of the air out and that's it. To defrost them you can either place them in the fridge the morning of, or what works even better is to put them back on the grill frozen. They come out great! Good luck!

Chicken Pot Pie IX
I'm giving this 4 stars even though I did make a few changes due to what I had...or didn't have... on hand. My husband won't eat peas so I used corn instead. Besides that I stuck to the rest. I used a pre-made pie crust and it worked fine. I'm one of those people who likes my food to look good. It completely fell apart. I actually served it with a spoon! It tasted fine, a bit bland but fine. I'm going to make them in individual dishes next time. I know it's simple and made to be "homey" but it need to look appetizing! LOL And I will be tweaking the spices as well. We'll see what I can come up with.
