Black Bean and Corn Quesadillas
Wish I could rate this with more than 5 stars. This was delicious (lots of yums and mmmgoods went around the table as we were eating), and now I have another vegetarian dish to serve when my daughter comes to visit. Don't change up the ingredients. It's great as is...the only thing I did different was what one reviewer suggested, and that was to spray a baking dish with olive oil cooking spray, put the filling and cheese in the center of the tortillas, fold them over, spray again, and then bake at 350 for about 15 mins. So much easier, and it eliminates the butter. Served with guacamole and salsa, it's delish. I might try using chicken instead of corn next time, just to add a little more protein, but either way is great. Thanks EFasse.

Slow Cooker Pulled Pork
Took a chance with this recipe even though it sounded strange using root beer, but so glad I did. My husband and I loved this, and it was sooooo easy! The only think I'd add (if you don't mind the calories) is serving extra barbecue sauce on the side. Thanks Livie's Mammy for an easy and great recipe.

Slow Cooker Cranberry Roast
Great recipe! I used beef. Also added quartered potatoes and carrot chunks about 4 hours before it was done as one reviewer suggested. Everything was DELICIOUS! I also used cornstarch in a small amount of water to thicken instead of the butter and flour. Thanks for the recipe.
