My boyfriend has been using this recipe for some time and always gets rave reviews when he makes it. I also don't like anchovies, but you really can't taste it at all and the recipe just doesn't turn out quite right without them. He also uses the anchovy paste instead of the fillets. I added some seasoned chicken I grilled in olive oil and the result was delicious!!

These turned out well, they stayed moist and tasty until they were all gone, which was only a couple of days. I did however, take some of the suggestions of others and added some brown sugar and cinnamon in the batter. I forgot to add vanilla, but will try that next time. I also made regular size muffins because I don't have any mini muffin tins.

I made this for a family reunion and it went fast! It was the only dessert to be eaten all up! Don't expect leftovers if you make this, it's delicious! To make it even better, while it is still warm, top with some vanilla ice cream.
