Parmesan Chicken
This was easy, and surprisingly delicious. I butterflied the breasts, pounded them super thin, and cooked them on a hot stainless steel skillet. I had no breadcrumbs, and used cornmeal (!!). Pretty pathetic, I know, yet still, it was (to quote my fiancee) "excellent." Plus, I had dinner on the table in like 20 minutes! Not bad, huh?

Tomato Chicken Parmesan

Raspberry and Almond Shortbread Thumbprints
I was really attracted to this recipe because there were so few ingredients! Still, these were wonderful. You can't rush baking, and I agree that the dough should be cold before going into the oven. Plus, it's important to make the cookies extra tall, so they don't spread too much. These were easy, beautiful, rich, and delicious.
