Tofu and Rice Stuffed Peppers
This recipe is really good. I wanted to mix it up a bit, so instead of tofu, I used black beans from a can (drained and rinsed). I also sauted green onions and red onions with the garlic. I didn't use any marinara sauce. Instead I served with sour cream. Very tasty!
