Whole Grain Waffles
These are TERRIFIC!! I have tried them substituting soy milk for the skim milk and also adding sunflower seeds or chopped walnuts. They are just sweet enough that you don't even have to put butter or syrup on them to enjoy them as a snack. Something else I do is separate the eggs, beat the whites until stiff, and fold them into the batter just before cooking. I use a belgian waffle maker so they come out fluffy and light and moist and just plain delicious. Hard to believe something so tasty can be good for you, too!
